The Department of Food and Nutrition was introduced to the College of Family Living in 1955. Before that time, it had simply been a division under the Home Economics department. In 1970 the department name was changed to Food Science and Nutrition and some curriculum changes were made as well. Marion Bennion (1955-1961, 1962-1970) and Sadie O. Morris (1961-1962) served as chairmen.

Functions
The Department of Food and Nutrition aimed to instruct students in understanding of the role of food in the health of an individual and the preparation of food of high quality in both nutritional and culinary properties. Courses include those such as Essentials of Nutrition, Menu Planning and Meal Service, and Food Preservation.
