Brigham Young University. Dept. of Food Science and Nutrition

The Department of Food Science and Nutrition was created in 1970 in a reorganization of the Department of Food and Nutrition in the College of Family Living. In 1974 the department was transferred to the College of Biological and Agricultural Sciences. In 1983 the department remained in the renamed College of Biology and Agriculture. The department itself was renamed in 2003 as the Department of Nutrition, Dietetics, and Food Science. Department chairmen included Marion Bennion (1970-1972), John Hal. Johnson (1972-1974), John M. Hill (1974-1978), Clayton S. Huber (1978-1983), Kay P. Edwards (1983-1984), Clayton S. Huber 91984-1989), Mark J. Rowe (1989-1998), James M. Harper (1998-1999), and Lynn V. Ogden (1999-2002).

Functions

The Department of Food Science and Nutrition was established to prepare students for graduate work, college teaching and a varieties of positions including: dietitian, food research and development scientist, quality control supervisor, food industry administrator, inspector, or test kitchen specialist. Courses included: essentials of nutrition, food technology, nutrition of mother and child, food science, food patterns of various cultures, meal management, food analysis, quantity food production and service, food service equipment and layout design, purchasing, community nutrition, experimental human nutrition, food chemistry, clinical nutrition, food processing, food quality preservation, food unit operations, food service organization and administration, food service systems management, special problems in nutrition, protein and amino acid nutrition, energy balance and vitamin nutrition, mineral nutrition, new food product development, flavor and sensory analysis of food, and environmental contaminants in food.
